Summer Squash Casserole

This is the most popular recipe we used to make at the reastaurant when we did find those previously mentioned zucchini on our doorstep. Now we still use it at home as a great vegetarian main dish and a side dish for everyone else.

4 Zucchini
6 Tomatoes
2 Large Onions
Margarine
6 slices American cheese
Salt, Pepper, Sweet Basil

Cut the veggies into thick slices (they will cook down). Place a few slices of margarine in the bottom of a casserole dish. Layer the veggies, first onion, then zucchini, finally tomato. Sprinkle with a little sweet basil and a few dashes of salt and pepper. Continue layering until casserole is piled high. Cover with aluminum foil and bake at 350F/177C until done, about 1 hour. Add the slices of cheese to the top and return to the oven until the cheese melts. Serve hot. Can also be cooked on the grill.
Even people who claim to not like zucchini have been pleasantly surprised by this dish.
Serves 8 as a side dish, 6 as the entrée.

Hi sykotik, If you mean the last line, a side dish is smaller than a main dish or entree, so you get more servings. Hope that helps!
